Raw vs. Cooked Vegetables
It depends on the vegetable. Some, like bell peppers and broccoli, are more nutrient-dense when raw. However, cooking carrots, tomatoes, and spinach can increase their bioavailability of certain nutrients like beta-carotene and lycopene.
